Healthy Lunch Ideas for Busy People

It’s a challenging world out there when it comes to healthy living and eating right? In today’s fast-paced world, we’re all trying to manage our overflowing schedules, our hectic routines and our list of never-ending tasks. As if all this was not troubling enough, we also have to deal with an obesity epidemic because of our increased reliance on safe, easy and processed food.
 
Each morning, it’s easier to eat a bowl of cereal than to actually boil an egg and make a fresh bowl of salad to go with. At lunch, it’s easier to grab a McDonald’s burger than it is to bring homemade lunch. At dinner… well, it’s easier to eat instant noodle than to cook your own version of spaghetti. We live super busy lives, with access to super easy but super fatty foods. Unfortunately, this lifestyle not only wrecks our health, but also causes us to suffer from multiple physical and mental discomforts. From high cholesterol to diabetes risk, from heart health to vitamin deficiency - the list is endless.
 
It is imperative then for you to take your health seriously. Even though you may lead a busy lifestyle, you can always try to take out time to make some easy and healthy lunch to carry to work. Here are a few healthy lunch ideas to pack for the day at work.
 

1. Stir-fry vegetables with Steamed Brown Rice

The easiest recipe there possibly can be. All you have to do is buy readily cut vegetables, toss them in a skillet with a pinch of olive oil, a sprinkle of salt and pepper, a dash of soy sauce and garlic and stir-fry them to a comfortably crunchy level. In the meanwhile, steam cook a bowl of brown rice and you’re done! This whole process would literally take you just fifteen minutes. Some folks may prefer adding in an egg or some additional cucumbers on the side to dilute the salty taste from the sauce.
 

2. Chickpeas Salad with Boiled Eggs

You can use canned chickpeas (although watch out for preservatives) if you’d like or you can also buy whole chickpeas and cook them in a pressure cooker for an hour (going and do some exercise whilst its cooking!) Once done, add in sliced onions, tomatoes, cucumbers, a sprinkle of salt, and a pinch of paprika powder (if you like it a bit spicy) to give it an awesome aroma and taste. Bring along two boiled eggs to have with the chickpeas. The protein in the eggs and the good carbs in the chickpeas will keep you full for hours until dinner.
 

3. Grilled Chicken/Fillet with Stir-Fried Vegetables

For those who prefer protein for lunch, a piece of grilled chicken (marinated over salt, pepper, garlic and a bit of oyster sauce) can be quite easy to make. All you need is to marinate the chicken and grill or shallow-fry it until cooked. Add in stir-fried vegetables and you have a healthy meal ready for the next day!
 

4. Steamed Mince Pie with Salad

Another easy lunch recipe that literally takes only 15 minutes to prepare. Add in salt, pepper, olive oil, an egg, a bit of cornflour, shallots, one onion and 3 cloves of garlic along with the mince meat in a blender. Blend it well and take it out in a metal bowl. Place the metal bowl over a boiling pot of water supported by a smaller pot or metal stand and cover the bowl. Let the dish cook for about 30 minutes. Prepare your favorite bowl of salad on the side. Once done, dish out the pie, cut a piece and pack it up with your salad for work! You can also add in brown rice if you’d like.
 

5. Vietnamese Style Banh Mi

Prefer eating sandwiches over the other meals? Easy. All you need is freshly baked baguette, a protein or seafood of your choice (tuna slices, chicken, mince meat, bacon slice etc), thin strips of onions, cucumbers, tomatoes, salad leaves and dressing of your choice. Put them all together and get a SubWay kind of sandwich - only better with less sodium, less sauce and fresher! How long does this take to make? Hardly ten minutes!
